Risotto is really popular in many restaurants, and now we can easily make it ourselves. The key to making this Cheesy Easy Risotto is using Arborio rice, adding chicken broth a little at a time, and stirring it constantly.
What you will need:
2 tablespoons butter
1 small onion, minced
3/4 cup Arborio or long-grain rice (see Note)
1-3/4 cups chicken or vegetable broth
1/2 cup water
1/3 cup grated Parmesan cheese
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
What to do:
In a medium skillet, melt butter over medium heat. Add onion, and sauté 3 to 4 minutes, or until tender.
Add the rice; cook 3 minutes, stirring constantly.
Add remaining ingredients and bring to a boil. Cover, reduce heat to medium-low, and simmer 15 to 20 minutes, or until liquid is absorbed and rice is tender.
